As we already know…I was raised on a small homestead-type Ohio farm…..
I live on a small similar-type farm in Florida now…..

I guess I’ve always been a functional homesteader and didn’t know it…..
But that was what everyone did back in the 1950’s and ’60’s…..
…..you planted things…you ate the things you planted…and you canned the rest…..

…..it’s been engrained in me from the socks up…..
***(On An Aside: My daughter recently “explained me” to one of her friends friend as—“she’s a Boomer”)—(there were knowing nods all around)—(What the @#$%^%&%$#!?!)***

…..(Well—Boom This!)—(…..said with emphasis & upward movement of my arm which is bent at ninety degrees)…..

But I digress…..
What I actually wanted to write about is—I love food…I love home-made food…I love the type of food that needs to take a while to cook…..

…..maybe not time-consuming to prepare…but the simmered…stewed-type that permeates the mortar & foundation of your home…..
A lot of the food that I grew up with was wholesome food on a budget…my parents were Depression Era children and food rationing WWII adults…..
My beloved recipes come from that stock of people…..

I’ve found that tough pieces of beef are usually more flavorful…..
…..like beef brisket for example…but you have to prepare it the right way…and you can’t rush it…..
It has to cook slowly and for a long time…..

Split pea soup…if it’s done right…is so good…..
…..and after it’s been chilled in the fridge…you can cut it into cubes…it’s that thick…and it’s made from just left-over bones and inexpensive dried peas…..


My daughters grew up on their PopPop’s split pea soup…and just like him…they eat it right out of the fridge in the morning for breakfast…..

Recently my older daughter’s Trinidadian friend brought over some of his mother’s Cow Heel soup…..

Oh my Lordie George!!!…that stuff was good!…..
…..it was a medley of flavors and heartiness…I don’t know how any was left over…but the next morning after it was chilled in the fridge…you could cut it into cubes…just like my Dad’s split pea soup…..

Her friend also made yucca fries to go along with the soup…and they were SO good…..
I love stick-to-the-ribs basic cooking…..
I love my cast iron collection of pans…they’re perfect for frying…..

…..ingredients don’t have to be super expensive to be good…..
Cast iron can last a lifetime and get handed down to subsequent generations…(while keeping every cook in between…muscled & toned…and never anemic)…..

There’s a meat market nearby where cow heels are offered…..
I intend to go and get some…I’m really hoping his Mother doesn’t mind sharing her recipe…..
